
This is a hearty breakfast the whole family can enjoy the first morning at your campsite. Requires only a few simple ingredients, a fire-safe, non-stick skillet, a hot fire or stove, and a good appetite! Goes well with a hot cup of coffee!
Ingredients:
a. One half-pound of sliced bacon
b. 4 cups of diced potatoes (Russet or gold are best)
c. One-half onion, chopped and diced
d. 6 eggs, beaten to smooth consistency
e. 1 cup of shredded cheddar cheese
Optional Ingredients can include chopped green onions, bell peppers, olive oil and butter for taste. Also, considering substituting the eggs for egg substitute for a low cholesterol option.
Directions
1. Cook the bacon first in the skillet to your desired level (crispy works best!) When done, remove from skillet and set aside for later. Stir the potatoes and onions into the hot bacon grease. Once added, cover and cook until potatoes are soft, about 12 to 15 minutes.
2. Crumble the bacon in to the potatoes. Then stir in the eggs, cover and cook until the mixture sets, about 2 to 3 minutes. Sprinkle the cheese generously on the top, and allow to melt.
3. Serve and Enjoy!
